Sweet Chestnut Paste​


Fall is the season for chestnut. As I have some spare time, I will make some chestnut paste for this fall. But I have to admit there is quite a lot to do for getting the paste done, my arms are so tiring afterwards. Ingredients: 400g Chestnuts 50g Brown Sugar 220ml Milk Method: 1) boil the chestnuts for 20 minutes, then turn off the heat and let it simmer for 10 minutes 2) take out the chestnuts and rinse with cold water 3) unshelled the chestnuts 4) cut the chestnuts into small chunks and cook in a pot with low heat 5) add in 100ml of milk and brown sugar, mix and press the chestnuts to cook into a thickened texture 6) Add in the remaining portion of milk, stir and cook into paste 7) blend the paste throughly with a blender 8) sieve out all the chunks with a flour sieve and a spoon 9) a) paste is formed b) the remaining chunks can be used for other dishes as well. Don't need to throw them away 栗子蓉 材料: 栗子 400g 黃糖 50g 鮮奶 220ml 步驟: 1) 先將栗子放入滾水煲20分鐘, 而且熄火焗10分鐘. 2) 然後撈起, 過冷河. 3) 將栗子殼剝下來.取出栗子肉. 4) 將栗子切粒, 開細火, 然後放入煲內, 5) 加入100ml鮮奶, 及黃糖. 慢慢攪拌及壓碎栗子煮至杰身, 6) 開始煮至杰身時, 可以慢慢倒入餘下鮮奶, 攪拌成蓉. 7) 將栗子蓉放入攪拌機內攪拌, 8) 倒出, 再用篩隔及匙壓平, 篩去粗粒栗子. 9) a. 栗子蓉便完成. b. 而未過篩的粗粒栗子不要棄掉啊! 可留待, 作其他食材之用.
